Recipe of the Month:
White Chicken Chili
Prep + Cook time: varies
3 (15-ounce) cans of white beans (Great Northern, Pinto, or White Kidney Beans)
2 1/2 cups chopped grilled chicken
1 cup chopped onion
1 1/2 cups yellow, red, or green peppers
2 jalapeno chili peppers OR 1/2 can or jalapenos
2 cloves garlic, minced
2 tsp cumin
1/2 tsp salt
1/2 tsp dried oregano
3 1/2 cups chicken broth
1. After vegetables are chopped, pour all ingredients into a pot and cook on medium heat (covered) until heated through, so long as the chicken is already cooked
2. If you have access to a crock pot, pour ingredients into crock pot and leave on medium heat for 8-10 hours, or high for 4-5 hours.
3. Serve with fresh cilantro, limes, or tortilla chips.
